Turmeric Ginger Chicken Noodle Soup

This comforting Turmeric Ginger Chicken Noodle Soup combines warming spices and tender chicken to create a flavorful and nourishing bowl perfect for any day.

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground turmeric
  • 6 cups chicken broth
  • 2 large carrots, sliced
  • 2 celery stalks, sliced
  • 2 cups cooked shredded chicken
  • 6 ounces egg noodles
  • Salt and pepper, to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent, about 5 minutes.
  2. Add minced garlic, grated ginger, and ground turmeric. Stir and cook for 1-2 minutes until fragrant.
  3. Pour in chicken broth and bring to a boil.
  4. Add sliced carrots and celery. Reduce heat and simmer for 10 minutes until vegetables are tender.
  5. Stir in cooked shredded chicken and egg noodles. Simmer for an additional 8-10 minutes until noodles are cooked through.
  6. Season with salt and pepper to taste.
  7. Remove from heat and garnish with chopped fresh parsley if desired. Serve hot.

Notes

For an extra boost of flavor, squeeze fresh lemon juice over each bowl before serving or add a pinch of crushed red pepper flakes for some heat.
