  • 1 cup almond flour
  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon almond extract
  • 1/3 cup sliced almonds
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together almond flour, all-purpose flour, sugar, salt, and baking powder.
  3. In a separate bowl, cream the softened butter with the egg and almond extract until smooth.
  4. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  5. Fold in sliced almonds, reserving a few for topping.
  6. Roll dough into 1-inch balls and place them 2 inches apart on the prepared baking sheet.
  7. Press a few sliced almonds gently on top of each cookie ball.
  8. Bake for 12-15 minutes or until edges are golden brown.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  10. Optional: Dust with powdered sugar before serving.

Notes

For extra crunch, lightly toast the sliced almonds before mixing them into the dough.
