Tortellini Soup with Sausage and Kale

This hearty Tortellini Soup with Sausage and Kale combines savory Italian sausage, tender cheese tortellini, and nutritious kale in a flavorful broth for a comforting and satisfying meal.

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (14.5-ounce) can diced tomatoes
  • 1 bunch kale, stems removed and leaves chopped
  • 1 package (9 ounces) refrigerated cheese tortellini
  • Salt and freshly ground black pepper, to taste
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Grated Parmesan cheese, for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the Italian sausage and cook until browned, breaking it up with a spoon as it cooks.
  2. Add diced onion and cook until softened, about 4 minutes. Stir in minced garlic and cook for an additional minute until fragrant.
  3. Pour in chicken broth and diced tomatoes with their juice. Bring the soup to a boil, then reduce heat and simmer for 10 minutes.
  4. Add the chopped kale and cook until wilted, about 5 minutes.
  5. Stir in the cheese tortellini and cook according to package instructions, usually 3–5 minutes, until tender.
  6. Season with salt, black pepper, and crushed red pepper flakes if using. Stir well.
  7. Ladle soup into bowls and garnish with grated Parmesan cheese before serving.

Notes

For added depth of flavor, try using spicy Italian sausage or garnish with fresh basil. Serve with crusty bread for a complete meal.
