Tomato Basil Noodle Soup

A comforting and fresh Tomato Basil Noodle Soup featuring ripe tomatoes, fragrant basil, and tender noodles in a flavorful broth, perfect for a cozy meal any day.

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 4 large ripe tomatoes, chopped (or 1 can 14 oz diced tomatoes)
  • 4 cups vegetable or chicken broth
  • 1 cup egg noodles
  • 1/4 cup fresh basil leaves, chopped
  • Salt and black pepper, to taste
  • Optional: 1 teaspoon sugar (to balance acidity)
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and cook for 1 minute until fragrant.
  3. Add the chopped tomatoes (or canned tomatoes) and cook for 5-7 minutes, stirring occasionally until they soften.
  4. Pour in the broth and bring the mixture to a boil.
  5. Add egg noodles to the boiling broth and cook according to package instructions until tender, about 6-8 minutes.
  6. Stir in fresh chopped basil, and season with salt, pepper, and sugar if using. Simmer for another 2 minutes.
  7. Remove from heat and ladle soup into bowls. Serve hot, topped with grated Parmesan if desired.

Notes

For a creamier texture, stir in a splash of heavy cream or coconut milk before serving. Serve with crusty bread for a full meal.
