Teriyaki Salmon Avocado Rice

A delicious and healthy dish featuring tender teriyaki-glazed salmon served over fluffy rice and creamy avocado, perfect for a satisfying weeknight dinner.

Ingredients

  • 2 salmon fillets (6 oz each)
  • 1/4 cup teriyaki sauce
  • 1 tablespoon olive oil
  • 1 cup jasmine rice, cooked
  • 1 ripe avocado, sliced
  • 1 tablespoon sesame seeds
  • 2 green onions, chopped
  • Salt and pepper, to taste
  • Lime wedges, for serving

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place salmon fillets on a baking sheet lined with parchment paper and brush with teriyaki sauce.
  3. Season with salt and pepper and bake for 12-15 minutes until salmon is cooked through.
  4. While the salmon bakes, warm the cooked rice and prepare avocado slices.
  5. Divide the rice into bowls, top with baked salmon and avocado slices.
  6. Sprinkle with sesame seeds and chopped green onions.
  7. Serve with lime wedges on the side for extra zing.

Notes

For extra flavor, drizzle a little extra teriyaki sauce before serving or add a side of steamed vegetables for a complete meal.
