Sweet Potato Pancakes

  • 1 cup cooked and mashed sweet potato
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter or oil
  • Vegetable oil or butter for cooking

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  2. In another bowl, combine the mashed sweet potato, buttermilk, egg, and melted butter until smooth.
  3. Pour the wet ingredients into the dry ingredients and gently stir until just combined; do not overmix.
  4. Heat a skillet or griddle over medium heat and lightly grease with oil or butter.
  5. Pour 1/4 cup batter onto the skillet for each pancake and cook until bubbles form on the surface, about 2-3 minutes.
  6. Flip the pancakes and cook for another 2 minutes or until golden brown and cooked through.
  7. Repeat with the remaining batter, adding more oil or butter as needed.
  8. Serve warm with your favorite toppings such as maple syrup, nuts, or fresh fruit.

Notes

For extra flavor, try adding a pinch of nutmeg or vanilla extract to the batter. Serve pancakes with a drizzle of maple syrup and a dollop of Greek yogurt for a delicious twist.
