Stuffed Bell Pepper Rice Boats

These Stuffed Bell Pepper Rice Boats are a colorful and flavorful dish featuring bell peppers filled with a savory blend of rice, vegetables, and seasonings, perfect for a wholesome dinner.

  • 4 large bell peppers (any color)
  • 1 cup cooked rice
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped onion
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn kernels
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove seeds and membranes.
  3. In a skillet, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
  4. Stir in diced tomatoes, black beans, corn, cooked rice, cumin, chili powder, salt, and pepper. Cook for 3-4 minutes, stirring occasionally.
  5. Remove from heat and mix in half of the shredded cheese.
  6. Stuff each bell pepper with the rice mixture and place them upright in a baking dish.
  7. Sprinkle remaining cheese on top of each stuffed pepper.
  8. Bake for 25-30 minutes, or until peppers are tender and cheese is melted and golden.
  9. Garnish with fresh cilantro before serving, if desired.

Notes

For extra flavor, add cooked ground turkey or beef to the filling, or drizzle with a squeeze of lime juice before serving.
