Strawberry Sugar Cookies

Delight in these soft, sweet strawberry sugar cookies that blend fresh berry flavor with classic sugar cookie goodness for a perfect treat any time of day.

  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • ½ cup finely chopped fresh strawberries
  • Extra sugar for rolling

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gently fold in the chopped strawberries.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Roll dough into 1-inch balls and roll each ball in extra sugar to coat.
  8. Place cookies 2 inches apart on prepared baking sheets.
  9. Bake for 10-12 minutes or until edges are lightly golden.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For a more intense strawberry flavor, try adding a teaspoon of strawberry extract or garnish the cookies with a light glaze made from powdered sugar and pureed strawberries.
