Spinach Garlic Meatballs

Deliciously tender meatballs packed with fresh spinach and vibrant garlic, perfect for a healthy and flavorful dinner option.

  • 1 lb ground beef
  • 1 cup fresh spinach, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 tbsp fresh parsley, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp olive oil

Instructions

  1. In a large bowl, combine ground beef, chopped spinach, minced garlic, breadcrumbs, Parmesan, egg, parsley, salt, pepper, and red pepper flakes if using. Mix well until all ingredients are evenly incorporated.
  2. Form the mixture into 1 1/2-inch meatballs and place them on a plate.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add the meatballs to the skillet, cooking in batches if necessary, and brown on all sides, about 5-7 minutes total.
  5. Reduce heat to low, cover the skillet, and cook the meatballs through for another 8-10 minutes.
  6. Remove meatballs from heat and let rest for a few minutes before serving.

Notes

Serve these meatballs over spaghetti or with a side of garlic bread for a complete meal. You can also add a marinara sauce for extra flavor.
