Shrimp Scampi Nourish Bowl

This Shrimp Scampi Nourish Bowl combines tender garlic butter shrimp with vibrant veggies and quinoa for a wholesome, flavorful meal perfect for any night.

  • 1 lb large shrimp, peeled and deveined
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1/4 cup dry white wine or chicken broth
  • 1/2 tsp red pepper flakes
  • 2 cups cooked quinoa
  • 1 cup steamed broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • Salt and freshly ground black pepper, to taste
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add shrimp, season with salt, pepper, and red pepper flakes, cooking until pink and opaque, about 3-4 minutes.
  4. Pour in white wine or chicken broth and lemon juice, simmer for 2 minutes.
  5. Stir in butter and lemon zest until melted and sauce is well combined.
  6. Remove shrimp from heat and stir in fresh parsley.
  7. Assemble bowls by dividing cooked quinoa, steamed broccoli, and cherry tomatoes among four bowls.
  8. Top each bowl with the shrimp and garlic butter sauce.
  9. Garnish with additional parsley and serve immediately.

Notes

For added crunch, sprinkle with toasted pine nuts or serve with crusty bread to soak up the flavorful sauce.
