This roasted butternut squash with ground turkey is a wholesome, flavorful dish combining tender roasted squash with savory, spiced turkey, perfect for a healthy weeknight dinner.

  • 1 medium butternut squash, peeled and cubed
  • 1 lb ground turkey
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss the cubed butternut squash with 1 tablespoon olive oil, salt, and pepper. Spread evenly on a baking sheet.
  3. Roast the squash in the oven for 25-30 minutes, until tender and caramelized, stirring halfway through.
  4. While the squash roasts, heat the remaining olive oil in a skillet over medium heat.
  5. Add the chopped onion and sauté until translucent, about 4-5 minutes.
  6. Add minced garlic and cook for another 1 minute until fragrant.
  7. Add ground turkey, cumin, smoked paprika, salt, and pepper. Cook, breaking up the meat until fully cooked and browned, about 7-8 minutes.
  8. Once the squash is done, combine it with the cooked ground turkey in the skillet and stir to combine gently.
  9. Garnish with freshly chopped parsley and serve warm.

Notes

For extra flavor, add a pinch of red pepper flakes to the turkey while cooking or drizzle with a little balsamic glaze before serving.
