These Oven-Crisped Parmesan Potatoes are golden, crunchy, and packed with cheesy flavor—perfect as a delicious side dish for any meal.

  • 4 medium potatoes, peeled and cubed
  • 3 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the cubed potatoes with olive oil, garlic powder, dried Italian herbs, salt, and pepper until evenly coated.
  3. Spread the potatoes in a single layer on the prepared baking sheet.
  4. Bake for 20 minutes, then remove and sprinkle the Parmesan cheese evenly over the potatoes. Toss gently to coat.
  5. Return to the oven and bake for an additional 15-20 minutes, until potatoes are golden brown and crispy.
  6. Garnish with fresh parsley if desired and serve hot.

Notes

For extra crispiness, soak the potato cubes in cold water for 30 minutes before cooking and pat dry thoroughly.
