  • 1 cup rolled oats
  • 1/2 cup vanilla protein powder
  • 1/4 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup mini dark chocolate chips
  • 1/4 teaspoon peppermint extract
  • 2 tablespoons ground flaxseed
  • 1-2 tablespoons water (as needed)

Instructions

  1. In a large bowl, combine rolled oats, vanilla protein powder, and ground flaxseed.
  2. Add almond butter, honey (or maple syrup), and peppermint extract; mix until well combined.
  3. Stir in the mini dark chocolate chips.
  4. If the mixture is too dry, add water one tablespoon at a time until it holds together.
  5. Roll the mixture into 12-15 bite-sized balls and place on a parchment-lined tray.
  6. Refrigerate for at least 30 minutes to firm up before serving.
