  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 cup cooked quinoa
  • 1 cup baby spinach
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 cup chopped fresh parsley
  • 1 avocado, sliced
  • Optional: 2 tablespoons crumbled feta cheese

Instructions

  1. In a bowl, combine olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper.
  2. Marinate the chicken breasts in the lemon-herb mixture for at least 30 minutes.
  3. Preheat grill or grill pan over medium-high heat.
  4. Grill chicken for 6-7 minutes per side or until cooked through and internal temperature reaches 165°F (74°C).
  5. Let chicken rest for 5 minutes before slicing.
  6. In serving bowls, layer cooked quinoa, baby spinach, cherry tomatoes, cucumber, and fresh parsley.
  7. Top with sliced lemon-herb chicken, avocado slices, and optional feta cheese.
  8. Drizzle with any remaining marinade or a light vinaigrette if desired.
  9. Serve immediately and enjoy your nourishing meal.

Notes

For extra flavor, add a sprinkle of toasted pine nuts or swap quinoa for brown rice or farro.
