Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 3 large egg yolks
  • 1 (14-ounce) can sweetened condensed milk
  • 1/2 cup fresh key lime juice
  • 1 teaspoon grated lime zest
  • Whipped cream, for serving (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan.
  3. Bake the crust for 8 minutes, then remove from the oven and let cool slightly.
  4. In a separate bowl, whisk together egg yolks, sweetened condensed milk, key lime juice, and lime zest until smooth and creamy.
  5. Pour the filling into the cooled crust and bake for 10 minutes until set but still slightly jiggly in the center.
  6. Remove from the oven and allow the pie to cool to room temperature, then refrigerate for at least 3 hours before serving.
  7. Top with whipped cream if desired and garnish with extra lime zest.

Notes

For a more intense lime flavor, use freshly squeezed key lime juice and zest. Serve chilled for the best texture and taste.
