  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3 large eggs
  • 1 cup crushed pineapple, drained
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1 cup chopped pineapple pieces (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, whisk together the flour, sugar, baking soda, and salt.
  3. In another bowl, beat the eggs, then add the crushed pineapple, oil, vanilla extract, and buttermilk. Mix until combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in chopped pineapple pieces if using.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.
