Italian Love Cake is a moist and flavorful dessert featuring almond flour, ricotta, and fragrant citrus zest, offering a perfect balance of sweetness and texture.

  • 1 ½ cups almond flour
  • 1 cup all-purpose flour
  • 1 ½ cups granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 3 large eggs
  • 1 cup whole milk ricotta cheese
  • ½ cup unsalted butter, melted and cooled
  • Zest of 1 lemon
  • Zest of 1 orange
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • 1 cup confectioners’ sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, whisk together almond flour, all-purpose flour, sugar, baking powder, and salt.
  3. In a separate bowl, beat the eggs. Add ricotta cheese, melted butter, lemon zest, orange zest, vanilla extract, and almond extract. Mix well until smooth.
  4. Gradually add the wet ingredients into the dry ingredients, stirring gently until just combined. Do not overmix.
  5. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  6. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
  8. Once cooled, dust the top with confectioners’ sugar before serving.
