These Ground Turkey Stuffed Peppers are a healthy, flavorful meal featuring lean turkey seasoned with herbs and spices, baked inside vibrant bell peppers for a satisfying dinner.

  • 4 large bell peppers (any color)
  • 1 lb ground turkey
  • 1 cup cooked rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes, drained
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper, to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove seeds and membranes.
  3. In a large skillet, heat olive oil over medium heat. Add onion and garlic; sauté until translucent.
  4. Add ground turkey to the skillet and cook until browned, breaking it apart with a spoon.
  5. Stir in cooked rice, diced tomatoes, oregano, cumin, salt, and pepper. Cook for 2-3 minutes until well combined.
  6. Stuff each bell pepper with the turkey mixture, pressing down gently.
  7. Place stuffed peppers upright in a baking dish and cover with foil.
  8. Bake for 30 minutes. Remove foil, sprinkle mozzarella cheese on top, and bake uncovered for an additional 10 minutes or until cheese is melted and bubbly.
  9. Garnish with fresh parsley if desired and serve warm.

Notes

For a spicy kick, add some chopped jalapeños to the turkey mixture or serve with a side of hot sauce.
