Ground Beef Stroganoff

A comforting Ground Beef Stroganoff featuring tender beef, creamy mushroom sauce, and tender egg noodles, perfect for a quick and hearty weeknight meal.

  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 2 tablespoons butter
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 cup sour cream
  • 8 oz egg noodles
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Cook egg noodles according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if necessary.
  3. Add chopped onion and minced garlic to the skillet; sauté until softened, about 3 minutes.
  4. Add butter and sliced mushrooms; cook until mushrooms are tender and browned, about 5 minutes.
  5. Stir in beef broth, Worcestershire sauce, and Dijon mustard. Bring to a simmer and cook for 5 minutes to reduce slightly.
  6. Remove skillet from heat and stir in sour cream until well combined. Do not boil after adding sour cream to prevent curdling.
  7. Season with salt and pepper to taste.
  8. Toss cooked egg noodles in the sauce until evenly coated.
  9. Serve warm, garnished with chopped fresh parsley if desired.

Notes

For a richer flavor, try adding a splash of dry white wine when sautéing the mushrooms or top with grated Parmesan cheese before serving.
