Ginger Scallion Chicken Noodle Soup

A comforting and flavorful Ginger Scallion Chicken Noodle Soup combining tender chicken, fresh ginger, and scallions in a savory broth, perfect for any season.

Ingredients

  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh ginger, sliced
  • 4 scallions, thinly sliced
  • 6 cups chicken broth
  • 2 boneless, skinless chicken breasts
  • 200g egg noodles
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the garlic, ginger, and scallions, and sauté for 2-3 minutes until fragrant.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the chicken breasts to the broth, reduce heat, and simmer for 15-20 minutes until cooked through.
  5. Remove the chicken breasts, shred them with two forks, and return the shredded chicken to the pot.
  6. Add the egg noodles and soy sauce, cooking until noodles are tender, about 5-7 minutes.
  7. Season with salt and pepper to taste.
  8. Ladle the soup into bowls and garnish with fresh cilantro if desired. Serve hot.

Notes

For extra depth, add a splash of sesame oil before serving or top with a soft-boiled egg for a richer meal.
