  • 1 cup low-fat cottage cheese
  • 1 large egg
  • 1 teaspoon garlic powder
  • 3/4 cup grated Parmesan cheese
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil (for brushing)
  • Optional: chopped fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine cottage cheese, egg, and olive oil until smooth.
  3. In a separate bowl, whisk together flour, baking powder, salt, garlic powder, and Parmesan cheese.
  4. Gradually add the dry ingredients to the cottage cheese mixture, stirring until a soft dough forms.
  5. Turn dough onto a floured surface and knead gently until smooth, about 2 minutes.
  6. Divide dough into 6 equal portions; roll each into a ball and then shape into bagels by poking a hole in the center with your finger and stretching slightly.
  7. Place bagels on the prepared baking sheet and brush tops lightly with olive oil.
  8. Bake for 20-25 minutes or until golden brown and cooked through.
  9. Remove from oven and let cool slightly before serving. Garnish with fresh parsley if desired.

Notes

For an extra crispy crust, brush the bagels with a little melted butter immediately after baking.
