  • 1 lb boneless, skinless chicken thighs, cut into chunks
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken pieces and brown until golden on all sides, about 5-7 minutes.
  2. Add chopped onion and minced garlic to the pot and sauté until softened and fragrant, about 2-3 minutes.
  3. Stir in the carrots, celery, and dried thyme, cooking for another 3 minutes.
  4. Pour in the chicken broth and bring the stew to a boil. Reduce heat to low and simmer for 25 minutes or until the chicken is cooked through and vegetables are tender.
  5. Slowly stir in the heavy cream and parmesan cheese, cooking for an additional 5 minutes until the cheese has melted and the stew is creamy.
  6. Season with salt and pepper to taste, then remove from heat.
  7. Garnish with fresh parsley before serving. Enjoy warm with crusty bread or over mashed potatoes.

Notes

For a thicker stew, stir in a tablespoon of cornstarch mixed with cold water during the last 5 minutes of cooking.
