  • 8 oz mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/4 cup vegetable broth or water
  • Salt and black pepper, to taste
  • 1 teaspoon dried thyme
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the cauliflower florets and mushrooms to the skillet, stirring to combine.
  4. Sprinkle dried thyme, salt, and pepper over the vegetables.
  5. Pour in the vegetable broth or water, cover the skillet, and cook for 8-10 minutes until cauliflower is tender.
  6. Remove the lid and cook uncovered for another 2-3 minutes to evaporate any excess liquid.
  7. Garnish with fresh parsley before serving, if desired.
