Garlic Butter Chicken Thigh Skillet

Savor tender chicken thighs cooked in a rich garlic butter sauce, seared to crispy perfection in a single skillet for a quick and flavorful meal.

  • 4 bone-in, skin-on chicken thighs
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter, divided
  • 5 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 cup chicken broth
  • 1 tablespoon freshly chopped parsley, for garnish

Instructions

  1. Pat chicken thighs dry and season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Place chicken thighs skin-side down in the skillet and cook for 5-7 minutes until the skin is golden brown and crispy.
  4. Flip chicken thighs and add 2 tablespoons of butter, garlic, thyme, and rosemary to the skillet.
  5. Cook for another 5 minutes, spooning the melted butter and garlic over the chicken.
  6. Pour in chicken broth and reduce heat to medium-low.
  7. Cover and simmer for 15 minutes, or until chicken is cooked through and internal temperature reaches 165°F (75°C).
  8. Remove lid, add remaining 2 tablespoons of butter and let sauce thicken slightly while spooning it over the chicken.
  9. Garnish with chopped parsley and serve hot.

Notes

For extra flavor, serve with a side of mashed potatoes or steamed vegetables to soak up the delicious garlic butter sauce.
