Garlic Butter Beef Bites with Creamy Mashed Potatoes

  • 1 lb beef sirloin, cut into bite-sized pieces
  • 3 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 1/4 cup beef broth
  • 2 lbs russet potatoes, peeled and chopped
  • 1/2 cup heavy cream
  • 1/4 cup milk
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Place potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook until tender, about 15–20 minutes.
  2. While potatoes cook, heat 1 tbsp olive oil in a skillet over medium-high heat. Add beef bites, season with salt and pepper, and sear for 2–3 minutes each side until browned. Remove from skillet and set aside.
  3. In the same skillet, reduce heat to medium, add 2 tbsp butter and minced garlic. Sauté garlic until fragrant, about 1 minute.
  4. Pour in beef broth to deglaze the pan, scraping up any browned bits. Simmer for 2 minutes.
  5. Return beef bites to the skillet, toss them in the garlic butter sauce, and cook for another 2 minutes. Remove from heat.
  6. Drain the cooked potatoes and mash them with heavy cream, milk, remaining 1 tbsp butter, salt, and pepper until smooth and creamy.
  7. Serve beef bites over or alongside the creamy mashed potatoes, garnished with fresh parsley.

Notes

For an extra flavor boost, sprinkle some grated Parmesan cheese over the mashed potatoes before serving.
