Chicken Spaghetti

Chicken Spaghetti is a comforting and flavorful baked pasta dish combining tender chicken, creamy sauce, and melted cheese, perfect for a hearty family dinner.

  • 2 cups cooked chicken, shredded
  • 8 ounces spaghetti, cooked and drained
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Sauté onion, green bell pepper, and garlic until softened, about 5 minutes.
  3. In a large bowl, mix cream of mushroom soup, cream of chicken soup, sour cream, and chicken broth until well combined.
  4. Add shredded chicken, sautéed vegetables, salt, pepper, and thyme to the soup mixture. Stir to combine.
  5. Fold in cooked spaghetti and half of the cheddar and Monterey Jack cheeses.
  6. Transfer mixture to a greased 9×13-inch baking dish. Sprinkle remaining cheeses evenly on top.
  7. Bake uncovered for 25-30 minutes until the cheese on top is melted and bubbly.
  8. Let cool for 5 minutes before serving. Enjoy warm.

Notes

For extra flavor, top with crushed buttery crackers or add a dash of hot sauce for a spicy kick before baking.
