Creamy Tuscan Chicken is a rich and flavorful dish featuring tender chicken breasts in a savory creamy sauce with sun-dried tomatoes, garlic, and fresh spinach.

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken breasts and cook until golden brown and cooked through, about 6-7 minutes per side. Remove chicken and set aside.
  4. In the same skillet, add minced garlic and sauté until fragrant, about 1 minute.
  5. Add sun-dried tomatoes and cook for another 2 minutes.
  6. Pour in chicken broth and heavy cream, stirring to combine.
  7. Stir in Parmesan cheese and cook until the sauce thickens slightly.
  8. Add fresh spinach and cook until wilted.
  9. Return the chicken breasts to the skillet and spoon the creamy sauce over them.
  10. Simmer for an additional 2-3 minutes to meld flavors.
  11. Serve warm and enjoy!

Notes

For a lighter variation, substitute heavy cream with half-and-half or coconut cream. Serve over pasta or with crusty bread to soak up the sauce.
