  • 3 large eggs, separated
  • 1/2 cup cottage cheese
  • 1/2 cup fresh blueberries
  • 1/4 teaspoon cream of tartar
  • 1 tablespoon honey (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a blender, combine egg yolks, cottage cheese, honey, vanilla extract, and salt. Blend until smooth.
  3. In a separate clean bowl, whisk egg whites with cream of tartar until stiff peaks form.
  4. Gently fold the egg yolk mixture into the beaten egg whites until just combined, being careful not to deflate the mixture.
  5. Fold in the fresh blueberries gently to avoid crushing them.
  6. Use a spoon to drop 6 even rounds of batter onto the prepared baking sheet.
  7. Bake for 25-30 minutes or until golden and set.
  8. Remove from oven and let cool slightly before serving.
