This colorful chicken fajita rice combines tender chicken, vibrant bell peppers, and flavorful spices for a quick and delicious Mexican-inspired meal perfect for weeknights.

  • 1 lb boneless, skinless chicken breasts, sliced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • 1 lime, cut into wedges (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add sliced chicken breasts, season with salt, pepper, chili powder, smoked paprika, cumin, and oregano; cook until chicken is browned and cooked through, about 6–8 minutes.
  3. Remove chicken from skillet and set aside.
  4. In the same skillet, add garlic and sliced onions; sauté for 2 minutes until fragrant.
  5. Add sliced bell peppers and cook until tender-crisp, about 4 minutes.
  6. Add rice to the skillet and stir to combine with vegetables.
  7. Pour in chicken broth, bring to a boil, then reduce heat to low and cover; simmer for 15 minutes or until rice is cooked and liquid is absorbed.
  8. Return chicken to the skillet and gently mix with the rice and vegetables; cook for an additional 2 minutes to heat through.
  9. Garnish with chopped cilantro and serve with lime wedges if desired.

Notes

For extra flavor, sprinkle some shredded cheese on top before serving or serve with a side of sour cream or guacamole.
