  • 1/4 cup almond butter
  • 1/4 cup unsweetened cocoa powder
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt
  • 2 tbsp chia seeds
  • 2 tbsp shredded coconut (optional, for topping)
  • 2 tbsp sliced almonds (optional, for topping)

Instructions

  1. In a medium bowl, whisk together the coconut milk, almond butter, cocoa powder, maple syrup, vanilla extract, and sea salt until smooth and well combined.
  2. Stir in the chia seeds evenly throughout the mixture.
  3. Cover the bowl and refrigerate for at least 2 hours, or overnight, allowing the pudding to thicken.
  4. Before serving, give the pudding a good stir to combine any settled chia seeds.
  5. Divide into serving bowls and garnish with shredded coconut and sliced almonds if desired.
  6. Enjoy chilled for a delicious and healthy treat.

Notes
