Chocolate Mint Pie

This rich and creamy Chocolate Mint Pie combines smooth chocolate ganache with refreshing mint flavor in a crisp chocolate cookie crust, perfect for a delightful dessert.

  • 1 ½ cups chocolate cookie crumbs
  • 6 tbsp unsalted butter, melted
  • 1 cup heavy cream
  • 8 oz semisweet chocolate, chopped
  • 1 tsp peppermint extract
  • 1 cup cream cheese, softened
  • ½ cup powdered sugar
  • ½ cup whipped cream
  • Fresh mint leaves, for garnish
  • Chocolate shavings, for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix chocolate cookie crumbs with melted butter until combined.
  2. Press the mixture into a 9-inch pie pan to form the crust. Bake for 8 minutes, then let cool completely.
  3. In a saucepan, heat heavy cream until it begins to simmer. Pour over chopped semisweet chocolate and let sit for 2 minutes. Stir until smooth to make ganache.
  4. Stir in peppermint extract and allow ganache to cool slightly.
  5. In a separate bowl, beat cream cheese and powdered sugar until smooth. Fold in whipped cream gently.
  6. Spread the cream cheese mixture evenly over the cooled crust, then pour the ganache on top.
  7. Chill the pie in the refrigerator for at least 4 hours or until set.
  8. Garnish with fresh mint leaves and chocolate shavings before serving.

Notes

For an extra minty kick, add a few drops of green food coloring to the cream cheese mixture or serve with a dollop of mint-infused whipped cream.
