Chocolate Mint Crinkles

  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon peppermint extract
  • 1/2 cup powdered sugar (for rolling)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In a separate large bowl, cream the butter and granulated sugar until light and fluffy.
  4. Beat in the egg and peppermint extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
  6. Cover the dough and chill in the refrigerator for at least 1 hour.
  7. Roll dough into 1-inch balls, then roll each ball generously in powdered sugar.
  8. Place on the prepared baking sheet about 2 inches apart.
  9. Bake for 10-12 minutes until crinkles form and edges are set but centers remain soft.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For an extra festive touch, drizzle melted white chocolate over cooled crinkles or add a few crushed peppermint candies on top.
