  • 1 cup chocolate cookie crumbs
  • 3 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup semi-sweet chocolate chips, melted
  • Whipped cream and edible decorations for garnish (optional)

Instructions

  1. Preheat oven to 325°F (160°C). Line a muffin tin with cupcake liners.
  2. Combine chocolate cookie crumbs and melted butter in a bowl; press mixture firmly into the bottom of each liner to form the crust.
  3. In a large bowl, beat cream cheese and sugar until smooth and creamy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Mix in vanilla extract and sour cream until fully incorporated.
  6. Fold in melted chocolate chips gently until the batter is evenly chocolate.
  7. Pour the cheesecake batter over the crusts in the muffin tin, filling each about 3/4 full.
  8. Bake for 18-20 minutes or until centers are set but slightly jiggly.
  9. Remove from oven and cool to room temperature, then refrigerate for at least 4 hours or overnight.
  10. Before serving, garnish with whipped cream and edible decorations to resemble gnomes.

Notes

For an extra chocolate boost, drizzle melted chocolate on top before serving or add mini chocolate chips to the filling.
