  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 2 cups cooked chicken, shredded
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups chicken broth
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 4 cups mashed potatoes (prepared)
  • 2 tablespoons butter

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Heat olive oil in a skillet over medium heat. Add diced onion, garlic, and carrots; cook until softened, about 5 minutes.
  3. Stir in the shredded chicken and frozen peas, cooking for another 2 minutes.
  4. Sprinkle the flour over the mixture and cook for 1 minute, stirring constantly.
  5. Gradually add chicken broth while stirring, then add dried thyme, salt, and pepper. Simmer until the sauce thickens, about 3-4 minutes.
  6. Transfer the chicken mixture to a baking dish and spread evenly.
  7. Top with prepared mashed potatoes, smoothing the surface and dotting with butter.
  8. Bake in the preheated oven for 20-25 minutes or until the top is golden and bubbly.

Notes

For an extra golden crust, brush the mashed potatoes with a little beaten egg before baking.
