Chicken and Dumplings

Chicken and Dumplings is a comforting classic Southern dish featuring tender chicken simmered in a creamy broth with fluffy, soft dumplings.

Ingredients

  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 2 tablespoons butter
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 1 small onion, diced
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. In a large pot, melt butter over medium heat. Add onions, celery, and carrots and cook until softened, about 5 minutes.
  2. Add chicken broth and bring to a simmer.
  3. In a bowl, whisk together flour, baking powder, and salt. Stir in milk until just combined to form dumpling batter.
  4. Stir shredded chicken into the simmering broth and vegetables.
  5. Drop spoonfuls of dumpling batter onto the surface of the simmering broth.
  6. Cover and cook for 15-20 minutes without lifting the lid, until dumplings are puffed and cooked through.
  7. Season with salt, pepper, and stir in fresh parsley if using.
  8. Serve hot, garnished with extra parsley if desired.

Notes

For extra flavor, add a splash of heavy cream at the end or serve with crusty bread to soak up the broth.
