Chicken Alfredo Lasagna Soup

This creamy Chicken Alfredo Lasagna Soup combines all the comforting flavors of classic lasagna in a hearty, easy-to-make soup perfect for cozy dinners.

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cubed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 (14 oz) can diced tomatoes, drained
  • 8 lasagna noodles, broken into pieces
  • 1 cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 cup shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add cubed chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  2. In the same pot, add diced onion and cook until softened, about 3-4 minutes. Add minced garlic and cook for 1 minute more.
  3. Pour in chicken broth, heavy cream, and diced tomatoes. Stir in dried basil, oregano, salt, and pepper.
  4. Add broken lasagna noodles and bring the soup to a boil. Reduce heat and simmer until noodles are tender, about 10 minutes.
  5. Return cooked chicken to the pot and stir in grated Parmesan cheese until melted and soup is creamy.
  6. Ladle soup into bowls and top each serving with shredded mozzarella cheese and chopped fresh parsley. Serve warm.

For extra richness, stir in a splash of white wine or top with garlic bread for a full meal experience.
