  • 1 pound breakfast sausage
  • 2 cups shredded sharp cheddar cheese
  • 1 can (10 oz) Rotel diced tomatoes and green chilies, drained
  • 1 1/2 cups Bisquick baking mix
  • 1/4 cup finely chopped onion (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, combine sausage, shredded cheddar cheese, drained Rotel tomatoes, Bisquick mix, and chopped onion if using.
  3. Mix thoroughly until all ingredients are evenly incorporated.
  4. Roll mixture into 1-inch balls and place on prepared baking sheet about 1 inch apart.
  5. Bake for 20-25 minutes or until sausage is cooked through and cheese is melted and golden brown.
  6. Remove from oven and allow to cool slightly before serving.

Notes

For extra crispiness, you can broil the sausage balls for 1-2 minutes at the end of baking—watch carefully to avoid burning.
