Cheesy Crowd-Pleaser Corn Dip

This Cheesy Crowd-Pleaser Corn Dip combines creamy cheese with sweet corn for a warm and irresistible appetizer perfect for parties and gatherings.

  • 2 cups frozen corn, thawed
  • 1 cup shredded cheddar cheese
  • 1 cup cream cheese, softened
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 2 cloves garlic, minced
  • 1 small jalapeño, seeded and finely chopped
  • ½ teaspoon smoked paprika
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 green onions, thinly sliced
  • 1 tablespoon chopped fresh cilantro (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a medium bowl, combine cream cheese, sour cream, and mayonnaise until smooth.
  3. Stir in shredded cheddar cheese, corn, garlic, jalapeño, smoked paprika, salt, and pepper.
  4. Transfer mixture to a small baking dish and spread evenly.
  5. Bake for 20-25 minutes or until the dip is bubbly and golden on top.
  6. Remove from oven and garnish with green onions and cilantro if using.
  7. Serve warm with tortilla chips, crackers, or sliced veggies.

Notes

For an extra kick, add a dash of hot sauce or swap cheddar for pepper jack cheese. This dip is also delicious served with toasted baguette slices.
