  • 1 cup rolled oats
  • 1 scoop vanilla protein powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 2 large eggs
  • 1/2 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey or maple syrup (optional)
  • Coconut oil or cooking spray, for the pan

Instructions

  1. Place rolled oats in a blender and blend until they form a fine flour.
  2. Add protein powder, baking powder, and cinnamon to the blender; pulse to combine.
  3. Add eggs, almond milk, vanilla extract, and honey or maple syrup. Blend until smooth batter forms.
  4. Heat a non-stick skillet over medium heat and lightly grease with coconut oil or cooking spray.
  5. Pour 1/4 cup of batter onto the skillet for each pancake.
  6. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook another 2 minutes until golden brown and cooked through.
  7. Repeat with remaining batter, greasing the skillet as needed.
  8. Serve warm with fresh fruit, nut butter, or extra maple syrup if desired.

Notes

For extra flavor and texture, add a handful of fresh blueberries or chocolate chips to the batter before cooking.
