  • 4 cod fillets (about 6 oz each)
  • 3 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon grated fresh ginger
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together honey, soy sauce, olive oil, minced garlic, lemon juice, and grated ginger to create the marinade.
  3. Place the cod fillets in a baking dish and season with salt and pepper.
  4. Pour the honey marinade over the cod, making sure each fillet is well coated.
  5. Allow the cod to marinate for 15-20 minutes for best flavor.
  6. Bake in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.
  7. Remove from oven and garnish with chopped fresh parsley before serving.

Notes

For added texture, sprinkle toasted sesame seeds on top before serving, and serve alongside steamed vegetables or a fresh green salad.
